Bouillabaisse-Marseille-France-Legendary Fish-Stew-Soup When you think of Marseille what comes to your mind? Mischief, Sailors, Debauchery, Vice, Vulgarity and of course Bouillabaisse, Marseilles is one, if not the oldest city in France. The history of this seaport city goes back to the days of Julius Caesar and Pompey. Marseilles has weathered time and has become outside of Paris a Cultural Center. This is not the Marseilles of “French Connection” fame. Enough digressing let me give you what you really want: The World Famous Bouillabaisse ala Endre Barath Marina Del Rey Style. Since I do not want to insult, the great Seaport and their Residents that I was not “true” to their time tested recipe hence, I had to add this disclaimer’s First let’s address the main ingredient: Fish Stock. This is generally made with tiny, flavorsome fish, generally to many bones and not enough meat on them. Since we are not in the Mediterranean seaport, we have to have substitutes. Recommend fish heads, frames, bones and tails. Try relatively bland fish such as (whiting, halibut) I am lucky I go to King Harbor in Redondo Beach. (Try to find a fishmonger and get as many small to medium fish heads and tails at a great price.) Try not to use, mackerel, sardines or bluefish they are too oily. Ingredients: ½ of olive oil, 2 large onions ( I like sweet onions), 2-3 leeks (whites only), 4-6 cloves of garlic, crushed, the fish & heads and bones, 1lbs can of plum tomatoes( or fresh ripe plum tomatoes if in season), Orange Zest (strip of rind without the whites), 1-2 celery stalks (cut in pieces) 2-3 sprigs of fresh thyme( or if none available get the dried version about a couple of tea spoons ) 3-4 bay leaves and ½ a teaspoon of cayenne pepper or any medium hot red pepper. A pinch or two of Saffron and a cup of Pernod or if none available cognac will do as well. And fresh black pepper either ground or cracked and four quarts of boiling water Here are the steps to prepare the fish stock : 1. Heat the olive oil, 2. Saute the onions, leeks and garlic for about 10 minutes or so than add the fish parts ….stir aggressively without regard for concern for crushing the material until the fish peaces start falling apart.3. Then add the tomatoes, orange zest, celery and the seasonings (thyme, pepper etc) lower the heat as not to burn them and as the flavors blend together 4. Pour the boiling water over all the material and simmer for about 20-30minutes. Most important step 5. Pour the mixture through a chi-noise or a food mill, with small quantities of fish scraps and the vegetable, press hard squeezing the material to get the “stock” do not quit early squeeze every drop out (that is where the flavors are). This is physically and timely consuming. Once you are satisfied that you got most of the Stock to be had, discard the fish scraps. This juice is your foundation of the Bouillabaisse. Now step 6. take shrimp, mussels, clams and a relatively inexpensive fish fillets like rock fish (about a pound of each) in a separate container steam the mussels and clams in water (save juice for later, do not add to...

On the afternoon of October 23, 1956, that is fifty five years ago a peaceful demonstration started in Budapest, Hungary that grew to about 200,000 plus people and they wanted freedom from oppression, they wanted democracy and most of all they wanted national independence from the Communist Soviet Regime. The government in return with the help of the Soviet armed force began to suppress this spontaneous and popular uprising. This uprising was’ the seed of hope’ which was planted into the young and old, communist and non communist Hungarian’s mind. The fact that the Communist controlling power was paralyzed for a few days and hours was hard to comprehend around the world. This event gave the opportunity for many Hungarians to escape the oppressive puppet government and hundreds and thousands of Hungarians crossed the border to Austria and in turn landed all over the world in various “free societies” such as West Germany, France, England, Australia, South Africa and the United States just to name a few who welcomed these Hungarian emigrants. In memory of the heroes of the Hungarian Freedom Fighters of 1956, monuments have been erected all over the world to commemorate this event. Particularly the survivors wanted to show, how grateful they were to those who lost their lives to give them freedom. The Hungarian community in Los Angeles has erected a Freedom Fighter’s Memorial as well. It is located at Mindszenty Square inside MacArthur Park. This is a 60 feet high monument and it makes it the tallest monument in Los Angeles. Millions of people see it every year and of course on October 23rd it is the focal point for Politicians, Diplomats and Hungarians local and nearby, who come to commemorate the fallen freedom fighters and celebrate the fact that they are free in their adopted country. Boston MA is the Third Greenest city in the United States As some of you know I was in Boston, MA not too long ago. A place I called home for over ten years. Every time I go back visiting I have great memories that return as we see friends and family. I also note the changes that take place. It has been over five years since the last time I went back, so with a keen eye for changes we went down to the Waterfront. Since I live in Marina Del Rey I wanted to see with a new set of eyes the changes. My first impression was how much Cleaner and Greener Boston were since the last time I was there. Then I noticed small changes that were huge to me. The third harbor tunnel project was completed and there were fewer cars driving above ground. Then I notice a lot more green grass, trees and clear sky. Then what caught my eye were these Bicycles that you can rent without an attendant. First I felt that here is another job potentially lost to modern technology, than I kept thinking how good this is for the environment Bike Rentals vs Car Rentals. Plus it made me think how much smarter that is since I remember parking was almost impossible to find in Boston. Then it made me wonder how good this is for the environment and I started wondering how Boston stacks up as far as being a Green City compared to the rest of the country. Thanks to Google Search, not surprisingly I found that Boston ranks third in the Country right after San Francisco which came in second (another one of my favorite cities, but that is for another blog) I am enclosing the link since it is very interesting to see how the Rankings were determined. The Venice Boardwalk in Venice CA I have written about Venice Beach, Venice Restaurants, the Venice Lifestyle and the Venice Library over the years. These are some of the pictures of that “lifestyle” I am referring to. They are well worth seeing. Venice is a unique beach community south of Santa Monica and north of Marina Del Rey. The history is very colorful as well as the visitors and the residents. Venice is a microcosm of Los Angeles. There are famous artists; some of the entertainment industry’s who is who, street musicians, and middle-class residents as well as left over hippies and flower children of the 1960’s. The Boardwalk is a great place to people watch any day but particularly on the weekends. It is a multiethnic and multicultural gathering of the you and old as well as the poor to the affluent. Either way it is a destination place for tourists from all over the world. The Venice Beach Ocean View Homes are quite pricey as well. The owners sit and watch the pedestrian traffic go by and they enjoy it as well. This is their back yard. Venice is often the center of debates and conversations about “identity search” I think they have their own “unique identity” they do not need to do anything else. Well you be the judge. Diane and I were walking around the Pier at King Harbor this past Sunday and we were totally amazed. Yes there really are pirates. They say a picture is worth a 1000 words, well check these pictures out. It is a fantastic and inexpensive Seaside seafood Restaurant, Period! http://www.killershrimp.com/ I have finally went, for years when they were at Washington St on the 2nd floor of a small strip mall with virtually no parking I kept eyeing them and kept saying we need to go and check it out. Then one day they closed, I was disappointed and said to Diane, see we should have gone. Then one day end of August beginning of September they opened up at this huge place virtually across from the Marriott Hotel with a huge parking lot. We had no excuse, great channel view, easy parking and technically walking distance from where we live. So you guessed it, we went. We tried the “The Killer Shrimp” with their original broth (simmered over 10+ hours) pure not over rice, not over pasta. If you do not like hot (spicy) do not try it. I loved it. It was out of this world. We also had the Clam Chowder, it was delish and then we had the Lobster Mac & Cheese. Diane is a connoisseur of Mac & Cheese, she could not get enough (only thing stopped her was that there was not enough room in our belly). I found this a very good food at a reasonable price. The wine list was good and reasonable as well. I look forward to going back soon. King Harbor, Redondo Beach, CA a seafood lover’s Destination place! As some of you know I have written about Redondo Beach, CA. before. Since it is National Seafood Month in October, we had to visit and indulge in the fresh seafood King Harbor has to offer. The Redondo beach community consists of is somewhere around 60,000 plus depending which Census Statistics you read. The recreation is so abundant here, the Harbor and the Pier take up about 150 acres of land, and so fishing and boating of all types take up a large part of the recreation. I enjoy more walking on the Pier and watch people and of course enjoy the food and drinks and finish with the shopping of my seafood. The City’s Pier and Harbor area is different from other areas of the City of Redondo Beach. The City owns all of the land; they in turn get the proceeds from sales and other taxes from the businesses in this area. The City receives a percentage of every dollar spent in the Pier and Harbor area. The history of this city is quite interesting I must write about this another time. It’s history goes back to the 1780’s. Today’s purpose was to get Bouillabaisse material (the recipe will be a future blog of course). So with that said please enjoy the pictures as well.
