How to make a fast and easy Salad on short notice? Check it out!

 I got home after trying to help a relocation client, who with a large dog needed help. At the same time I was facing a situation in trying to keeping a deal together and writing another offer at the same time.  

Then Diane came home from volunteering at the Lange Foundation this in the afternoon and she was hungry and wanted to know what is for dinner. (This is a classic situation of a Pet Friendly Realtor who is also the cook at home).

Needless to say I have not thought about dinner. So I figured, left over soup and a fresh appetizer of the salad kind would do the trick fast and easy dinner on short notice. I was motivated about a fast and easy meal, since the Red Sox and the Yankees were having their final game at Fenway Park today. I did not have a lot of time to focus on dinner, since you know I am a diehard Red Sox fanJ

So here we go, the ingredients: one ripe tomato, one ripe avocado, and some fresh buffalo mozzarella cheese, extra virgin cold pressed olive oil and Orange Champaign Vinegar from Trader Joe’s and a bit of Italian Parsley. (Let me know what you think? Diane loved it!)
